Thank you for taking the time to have a look over our agave bible.  At this stage you may, or may not love tequila.  If you don’t, give it another shot, you just haven’t found the right one yet.  Such is the diversity of this wonderful spirit, there is the perfect tequila for everyone.  We have compiled our agave bible to assist you with finding that right tequila for you.

For me, it is really hard to not love something that takes so long to create.  There is so much history and passion that goes into creating tequila.  It is not like other spirits where they are made from an annual crop.  The agave used for tequila takes between 7-12 years of soaking up the nutrients of the mineral rich soils & sunshine to reach maturity.  The agave is truly a unique plant, and the agave spirits made from the agave, are unlike anything else there is.

8 Tequila Truths

 

 Your bad tequila story is from ‘mixto tequila”

Mixto tequila is 51% tequila, 49% low-grade sugarcane distillate.  We only serve 100% blue agave, no additives. 

The worm is BS:

The worm in the bottle was started as a marketing gimmick for cheap mezcal.  There is nothing traditional about it. 

Tequila is NOT made from a cactus

Tequila is made from blue weber agave plant, a type of lilly.  It takes 7-12 years to mature before tequila can be produced! 

Tequila is like champagne

Tequila is demarcated to 5 states in Mexico much like champagne is to Champagne, France. 

Mexicans sip tequila

Tequila, A Brief History

 

Way, way back in the day some Spanish guys arrived in Mexico. They really liked wine and spirits, but one night they ran out of the stuff from back home. Having seen the locals having a mighty fine time with a drink made from the local agave plant, the Spanish guys decided to take a crack at making it themselves using European distilling techniques. Bang. Modern mezcal was born.

But the story doesn’t end there.

It was soon discovered that the blue agave grown in the lush highlands and volcanic valley (where the town of Tequila is located) in the state of Jalisco consistently produced the very finest mezcal. Over time, the mezcal produced in these regions gained a reputation for being the very best going round. In fact, its reputation spread so far that after a while Jalisco’s famed drink took on the name Tequila in honour of the now-legendary town.

These days, Jalisco and its surrounding states still produce the finest tequila available. In fact, it produces all of the tequila available. Because just as is the case with Champagne in France, authorities ensure that only tequila produced around Jalisco region using 100% pure blue agave can be legitimately referred to as tequila.

Blue agave used in tequila may only be grown in the states of Jalisco, Tamaulipus, Nayarit, Guanajuato and Michoacán.  There are only 2 distilleries currently in business outside Jalisco which are Chinaco in Tamaulipas and Corralejo in Guanajuato.

The main tequila-producing regions, producing around 98% of tequila, are the located around Guadalajara.  The two main regions are the highlands / Los Altos and the lowlands or Tequila valley.

Highlands / Los Altos agave tends to be larger and produce tequila that is sweeter (due to the larger plant/higher sugar content) with a flavour leaning more towards a fruitier citrus taste than the herby flavours found in the lowland tequilas.

Lowlands / Tequila valley agave, grown below 6000’ elevation, tends to be smaller than the highlands agave and produce tequila that is herbaceous and earthy, due to the soil not being as rich as in the highlands

Tequila Categories (teh-KEE-lah)

Blanco

This is the Blue Agave spirit in its purest form. It is clear and typically un-aged, where the true flavours and the intensity of the Agave are present, as well as the natural sweetness. It can be bottled directly after distillation, or stored in stainless steel tanks to settle for up to 4 weeks. There are some Blanco (“white”) products that are aged for up to 2 months to provide a smoother spirit.

Reposado

A reposado (“rested”) has been aged in oak containers for at least two months. The aging imparts colour and flavour to the tequila, smoothing it out and often adding notes of vanilla, oak, chocolate, coffee, nuts and whiskey to the palate. Reposado is the best-selling type of tequila in Mexico.

Añejo

An añejo (“aged”) tequila has been aged in oak barrels for at least one year. Añejos have usually traded in much of their agave essence for oaky characteristics after so much time in the barrel. Some argue that an añejo, while obviously tequila, more closely resembles a cognac or scotch than it does a blanco. At the same time, they tend to be the most accessible to new tequila drinkers.

Extra Añejo

Tequila aged more than 3 years, an “extra añejo”. Following the same rule as an “Añejo”, the distillers must age the spirit in barrels or containers with a maximum capacity of 600 litres. With this extended amount of aging, the Tequila becomes much darker, more of a Mahogany colour, and is so rich that it becomes difficult to distinguish it from other quality aged spirits.  These extra añejos are extremely smooth and complex

Brand Information          Tequila Centinela was established in 1904 and was the first distillery located in Arandas, Jalisco.  Centinela means “the one to watch and keep”.

The process has not changed; we combine tradition with top technology to ensure the consistency in our products. Our Agaves take approximately 8 years to mature, and are hand-picked at their peak from our own Agave fields. We also buy 20% from local producers to help the region’s economy. We take our time cooking the Agave as this is crucial in our tasting profile. We use a clay oven (compared to others that use stainless steel ovens) that gives our cooked Agaves a smoky flavor, and a sweet after taste. Tequila Centinela slow cooks with steam and this process takes approximately 24 hours. In the first 4 hours we get, by gravity, some liquids from the cooked agave that we discard, to eliminate impurities and “the amargo” (the bitter). The cooked Agave is then allowed to settle and cool for an additional 24 hours.

Brand Information          An oddity in the tequila world, Chinaco — one of the first, if not the very first, 100% agave tequila released in the U.S. — is produced not in Jalisco (where the vast majority of tequila hails from) but in Tamaulipas, a state to the east which borders on the Gulf of Mexico. This terroir gives Chinaco a considerably different character than most Jalisco tequilas.  Everything in Tamaulipas is a little different. The soil is a mix of types, quite different from the clay you will find in Jalisco, and the distillery’s location, less than 50 miles from the Ocean, offers uniqueness, too. Even the agave growing elevation — ranging from 500 to 5000 feet — spans what would be considered both highland and lowland growing areas in Jalisco. Agave used in Chinaco is all organic.

Here, in the highlands of the small town of “San Francisco De Asis”, on 1,000 acres of brick red soil and agave, grow the finest piñas in the industry. Brand Information          At Tequila Los Abuelos, we are committed to producing the finest Tequila possible. Our Tequila is made using traditions established centuries ago, from 100% stone milled agave, entirely produced on our estate. We are located in the town of Tequila, Jalisco, Mexico, first populated in the 1530’s by our Spanish forefathers. Our land is nestled in rich valley at 4,000 feet of altitude, in the foothills of the 9,560-foot tall, Volcan de Tequila. Here is where our blue agaves grow for seven to eight years, caressed with the warmth of the Mexican sun, nourished by the summer rains, and protected from the harsh and cold winter winds.

Our Tequila is produced entirely within the walls of our estate, using centuries old, traditional methods, which although are very labor intensive, create a tequila, which is unequaled in taste and smoothness. Using the age-old brick oven, with its meter-thick walls, we cook our agave for thirty-six hours. Then we crush or mill the agave as my Tartarabuelo did over 135 years ago in the stone mill called the Tahona. The crushed agave is then washed with the pure mountain water from the Volcan de Tequila to separate the pulp from the woody fibers to create an agave juice called mosto. The woody fibers of the agave, called bagazo, are removed at this time, and taken to the fields to use as compost. The agave mosto is then naturally fermented for five days in small wood vats, and then double distilled using small, labor-intensive copper pot stills. Our glass bottle is hand-blown in Tonala, Jalisco by artisan glassmakers and our bottle tops, artisan designed to represent the harvest agave, or Pina, are hand-made by our workers.

Tequila Fortaleza is the American label for Tequila Los Abuelos, due to a Rum with the name “Abuelos” already being distributed in the USA.

Patrón is steamed slowly according to tradition in a large masonry stoves to concentrate the flavors. Brand Information          In 1937, Don Felipe opened La Alteña Distillery in the mountainous region of Jalisco, Mexico, known for producing the best blue agave.  Don Felipe passed the business to his son, Felipe J. As Master Distiller, Carlos maintains today the standards of excellence set down by his grandfather.

Many of the methods used to create this fantastic spirit are still the same as a century ago. For much of the production, a large stone wheel, a Tahona, is used to crush the cooked agave plants, with the resulting juice and agave fibers mixed in a barrel by foot before fermentation and distillation.

Mezcal (mes-kael)

“Para todo mal, mezcal, y para todo bien también.” –  “for everything bad, Mezcal; for everything good, the same.”

Mezcal is actually a generic word that covers a wide range of distilled agave spirits that are made in every Mexican state except Veracruz, Quintana Roo, Campeche and Baja California. It is not a singular product, but should be considered in the plural – mezcals

Technically, all tequilas are mezcals, which were also known as mezcal wines and mezcal brandies before the name tequila became common and replaced mezcal for that one particular type of mezcal. Today they are distinct products, differentiated by production process, place of origin and taste, much the same way rye whiskey and scotch whisky differ.

Most mezcal is made in Oaxaca state today, although some is also made in Guerrero, Zacatecas, and other states.

Mezcal has its own magic and mystery. It retains its traditions as a ‘people’s drink’ – made in tiny operations that have hardly changed over the intervening centuries. Slow to modernise, family run, tiny output, mezcal is still at the heart and soul of ancient Mexico and her traditions. No other spirit in the world comes from such a wide natural and cultural array as do mezcals.

Mezcal can be produced from up to 28 varieties of agave (including blue agave) and is made around the city of Oaxaca. Most mezcals are made from the Espadin agave, although some mezcal producers blend agave varieties to create a distinct flavour.

Mezcal traditionally has a very unique, smoky flavour that makes it fairly easy to distinguish from tequila. It also tends to taste sweeter, or richer, than tequila. Some mezcal producers have adopted production processes similar to tequila, and the resulting mezcal has flavour profile similar to tequila.

When tequila is made, the agave head is baked or steamed in an above-ground oven. This began in the late 19th century. Mezcal producers, however, often follow the traditional method of using in-ground pits. The agave piñas are roasted or grilled over hot rocks in a cone-shaped pit. A fire is started and burns for about 24 hours to heat the stones that line the pit. The agave heads are put into the pit and then covered with moist agave fiber that is left over from the fermentation process. A layer of agave leaves or woven palm leaves cover the fibers and the agave heads are left to cook for two to three days.

If you, like me, are a fan of a heavily peated scotch whisky, there is a fair chance you will become a fan of mezcal.  It may not replace your favourite scotch, but it will definite interest you for its intense flavor profile and massive whack of smoke.

This Pechuga de Maguey is NOT the type of Pechuga that would include a chicken breast in the still, but instead they are referring to the breast of the Maguey. This means that after distilling their classic espadin, the Pechuga de Maguey is steeped for several days with freshly roasted Agave split down the middle to expose the heart (or breast) of the plant. Expect the rich sweet flavours of roasting agave with the subtle smokiness behind.

Pechuga begins with Minero mezcal that has already been double distilled. In preparation for a third distillation they place about 100 litres of mezcal in the still and add about 100 kilos of wild mountain apples and plums, big red plantain bananas, pineapples, a handful of almonds and a few pounds of uncooked white rice. Next, a whole chicken breast (Pechuga), skin removed, bone structure complete, is washed in running water for about three hours to remove any grease. This is then suspended by strings in the atmosphere of the still and a 24 hour, third distillation is begun. The vapour passes over the pechuga and condenses into a crystal clear liquid that has an amazing taste and smoothness.

The Tobala maguey is found growing naturally only in the highest altitude canyons in the shade of oak trees like truffles.

Tobala’s form is different than the maguey Espadin (sword) or maguey Azul (blue). It is smaller and broader leafed. It takes about eight piñas (agave hearts) to equal one piña from either of the more commonly propagated and cultivated Magueys.

Sotol (soh-tohl)

Distilled primarily in the region of Chihuahua, sotol is a northern relative of the more familiar tequila and mezcal. The spirit is made from a wild-growing agavacea variety commonly known as Desert Spoon (or, in Spanish, sotol), which can be found in the arid Chihuahua desert and north into the desert and grasslands of New Mexico and Texas. The prickly evergreen plant can take between 12 and 15 years to mature, at which point the plant is harvested, the heart is cooked and the juice is fermented and distilled, with some sotol going into oak barrels for aging.

Raicilla (rye-see-ya)

You can think of raicilla as a pre-hispanic, moonshine-style version of mezcal, distilled in the Jalisco coastal towns like Puerto Vallarta and its surrounding little villages such as Mascota, El Tuito, and Cabo Corrientes, among others. The process of making raicilla is similar to that of Oaxacan mezcal: Grow a wild agave (typically the Chico Aguiar and Maximilana varietals) for about eight years, fire-roast it, ferment the shredded cooked agave “mash,” distill once or twice, and water down with fresh spring water.
